Farm to fork from one of Chicago’s largest rooftops: SAVOR…Chicago has partnered with the Chicago Botanic Garden to plant the Midwest’s largest farm to fork rooftop garden on the roof of McCormick Place.
The 2.5 acre garden produces seasonal harvests that yield 8,000 lbs. of fresh produce including beets, kale, carrots, lettuce, peppers, beans and herbs used in Savor…Chicago kitchens. It is home to 20,000 honey bees in three hives producing 50 lbs. of honey a year and 2,000 Red Wiggler worms creating lbs. of vermicompost annually.
